"Cat Cay" Fried
Dolphin (A kid's favorite)
Ingredients :
Start with Captain Carl fresh caught thin dolphin filet (or any similar
white meat fish : except Wahoo) Olive Oil Italian bread crumbs
Directions: Quickly
rinse and pat dry fish filets. Lightly salt and pepper fish and then coat both
sides with Italian bread crumbs. Heat oil in a pan (medium heat). Heat fish in
pan for approximately two minutes on each side or until lightly golden brown.
As with any fish, avoid over cooking. Serve over rice or pasta with a lite
tomato sauce (see below)
SAUCE
Ingredients :
Slice thinly one whole large onion ½
bellpepper, zucchini 14 oz can diced Italian tomatoes . Italian
seasoning to taste
Directions:
Sautee onion and pepper in fry pan with a little olive oil until
tender. Add the zucchini and the rest of the ingredients Simmer for about 10
minutes and serve over pasta and fish. |
