Amberjack Fish Chowder "Chub Cay" style

Ingredients :

Amberjack cut into chunks
Juice of ½ lime
Salt and pepper
1 sausage pattie
1 large onion, chopped
1garlic clove, minced
1 rib celery, finely chopped
1small can chopped tomatoes
1small can tomato paste
2 cups chicken broth
1 cup water
3 tblspoon ketchup
3 tblspoon hot sauce (or to taste)
3 tblspoon salsa
2 potatoes cut into small cubes
1 small can of corn
1 tspoon Italian seasoning, cayenne pepper, paprika
salt and pepper to taste


Directions:

Put amberjack into a bowl, season lightly with salt and pepper. Squeeze the lime juice over the fish and toss. Cover and set in the refrigerator.

Chop sausage and fry in pot with a little olive oil Saute the onion, garlic and celery until tender Add all the rest of the ingredients Bring to a boil and then lower heat, simmering for at least 2-3 hours.

30 minutes before serving, add the amberjack.

Serve with fresh warm baked bread and some red wine!
